Chemical and Physical Changes in Gelatin Solutions during Hydrolysis

چکیده

1. The change in viscosity and the corresponding increase in the carboxyl groups, as determined by the formol titration, has been determined in gelatin solutions during the progress of hydrolysis by pepsin. 2. Very marked changes in viscosity are found to result from very slight chemical changes. If the viscosity is increased by the addition of acid a greater change in viscosity (volume of solute) is caused by the same percentage change in the number of carboxyl groups. The percentage change in the volume of solute, caused by the same percentage increase in the number of carboxyl groups, is independent of the concentration of gelatin. 3. These results are in agreement with the idea that the high viscosity of gelatin solutions is due to the presence of swollen micells, since a slight chemical hydrolysis may be sufficient to rupture a micella and so cause a very large change in viscosity.

Changes in Enzyme Efficiency During Lipase-Catalyzed Hydrolysis of Canola Oil in a Supercritical Bioreactor

Enzyme efficiency was investigated in the lipase-catalyzed hydrolysis of canola oil in supercritical carbon dioxide (SCCO2). Immobilized lipase from Mucor miehie (Lipozyme IM) was used as the catalyst and the results showed that enzyme efficiency dropped at high pressures indicating a possible change in enzyme microstructure. Therefore, scanning electron microscopy (SEM) was used...

Investigation of Macroporous Calcium Phosphate Cement Obtained by Foamed Gelatin Polymer

This study deals with the effect of gelatin on physical and mechanical properties of  calcium phosphate bone cements. The mixture of tetracalcium phosphate (TTCP) and dicalcium phosphate (DCPA) as the cement powder was mixed with 6 wt% Na2HPO4 solution containing different amount (0, 2, 5 and 8% in w/w) of foamed gelatin as liquid phase. The physical properties were determined in the terms of s...

The Effects of Acidic and Alkaline Hydrolysis Process on some Physical and Chemical Properties of Broiler Chicken Feathers

The objective of this study was to evaluate the physical and chemical properties of the broiler feather concentrate (BFC) in different hydrolysis processes. The raw materials in the form of broiler feather waste (BFW) were hydrolyzed into broiler feather concentrate (BFC) products in the form of feather meal. A total of 1000 g of dry feather samples were used in this study. The study was design...

Synthesis, characterization and swelling behavior investigation of gelatin-g-Poly(Acrylic Acid-co-Itaconic Acid)

A novel pH-responsive superabsorbent hydrogel based on gelatin was prepared through crosslinking copolymerization of poly (acrylic acid) and poly (itaconic acid). The copolymerization conditions including monomers, initiator, gelatin and crosslinker concentration, reaction temperature, and neutralization percent were systematically optimized to achieve a hydrogel with swelling capacity as high ...

The Rôle of the Activity Coefficient of the Hydrogen Ion in the Hydrolysis of Gelatin

1. The hydrolysis of gelatin at a constant hydrogen ion concentration follows the course of a monomolecular reaction for about one-third of the reaction. 2. If the hydrogen ion concentration is not kept constant the amount of hydrolysis in certain ranges of acidity is proportional to the square root of the time (Schütz's rule). 3. The velocity of hydrolysis in strongly acid solution (pH less th...
